Samurai Champloo is the only anime I ever watched so far (and it was yeaaaaars ago) and I enjoyed it :). Would recommend it too, epecially baseball episode was fun.

I'm not a big fan of anime, but I have watched Cowboy Bebop, Soul Eater, Baccano! and Serial Experiments Lain. All these are decent enough, but Baccano! is probably my favorite of those. But from what you said you like, I think you will enjoy Soul Eater more.

I don't... understand why people like that anime. There is better and more interesting philosophy elsewhere, there is better mech/monster combat elsewhere. It seems like an experiment in having lead characters with 0 redeeming qualities, to see if anybody cares when bad stuff happens to them. There was 0 character development, which leaves the 'lead' a semi retarded crybaby the whole time.
I wish I liked it, I really do. Maybe I'm missing some of the more standard behavioral reactions and I'm just missing something.

SHIGURUI: DEATH FRENZY is outstanding, and has a really unique animation style, i recommend it to everyone who has even the slightest bit of respect for martial arts culture. it has ended already but you can find it on youtube or torrents

The one thing I'd stay away from would be Neon Genesis Evangelion. Terrible. Suggested to me by everyone I knew - hated it rather thuroughly. Genuinely has next to 0 redeeming qualities when compared with almost any other anime of similar genres.

FLCL - 6 episodes, finished - it's just nuts... reminds me a lot of my mentality during jr. high
Ghost in the Shell: S.A.C. - 2 seasons, finished - a believable high-tech-world-of-the-future focusing on an elite police/military unit
Death Note - 2 seasons, finished - as brilliant as a game of chess, but played with people's lives (1st season's better than 2nd)
Black Lagoon - 2 seasons + ova, finished(?) - guns. (the ova's just okay...)
Neon Genesis Evangelion - original is finished and ended twice; retelling is in progress - giant robots, but it's really about people and how messed up they all are
Batman Beyond - 3 seasons, finished - because it's still awesome and I don't care that it's not "anime"

It does get a more defined plot later. Most anime is episodic. That's because of the serial nature. You can try the movie Ghost in the Shell (if you haven't). Not the same plot but more meaningful and deep, I feel. And of course, since it's a movie and not a show, it's not episodic at all.

Yeah, like Euclase said, later you get the main story. Most of the 'independent' episodes are focused to place you into that world. With those infos you have a better understanding of the big picture.
Ghost in the Shell have a lot of contemporary reflections: hacktivism, technology pushing human boundaries, government/companies relations, human-computer/internet interface, terrorism etc.
