I love a good pollo en mole, although mole varies wildly. Otherwise, camarones ala diabla.

I don't eat Mexican food. That would be cultural appropriation.

(Mexican is probably my favorite cultural food group... except all the beans -- I get black beans if they're available as all the lard in the regular beans doesn't play well with my throat.)
