Mainly coop would be preferred if possible

100% honest, what I did was just get my mom started on Skyrim and just sat back and encouraged/helped when applicable. It wasn't where we were both playing, but it gave me time to actually chat while she responded and played. She died so many times during the first dragon encounter lol...

When she got home she bought a PS3 and Skyrim off Craigslist though so I did my job!

There is also Minecraft, Terraria, How To Survive, Divinitiy Original Sin, even Borderlands, list never ends.
