Based on the reviews, it looks like the Mayflash is your best bet.
That said, I think you should go to a nearby store and see if you can try out a few fight sticks for yourself to see if they feel right to you.

it was just a speculation based on components parts, since buying sanwa components in-stock alone costs ~40€, ~40€ sticks cannot be any good :)
Also, I bought a shitty 40€ stick before building mine, and it broke (still usable but even worse than it already was) after 1 year or so... so, please avoid cheap sticks, keyboard is better :)

If you have basic woodworking/electronics skills you can pull this out too with not much effort, saving more than 40€ compared to tournament sticks, with the exact same quality (or even better if you model it according to your hand and personal preferences just like I did)
EDIT: I've been using the stick above regularly (at least 1h every 2-3 days) for the past 8 years, still works like the first time.

first let me check with you what materials you would need to build one:
To buy original japanese arcade parts I'd like to suggest http://www.arcadeshop.de (which is the shop I used when I bought mine, which are perfectly fine after 8 years)
For extremely detailed reference on everything (except woodworking and soldering 101) http://www.slagcoin.com/joystick/introduction.html by extremely detailed I mean that they usually present more than one choice (a lot more) for every part of the building process, this can even get you brand new ideas: my custom built stick has the front panel completely detachable so that I can rewire/replace/fix things on-fly (still nothing happened yet, but well, I can also change the front picture on fly :D)
