For what it's worth, one of my guildies in WoW had a stroke and he was able to play WoW within a few months, and his doctor said it was very good for rehabilitation to play video games because it practices all sorts of things.
AbleGamers does reviews that go into both mobility and cognitive accessibility; here's a link to their PC review archive: http://community.ablegamers.com/Reviews/game-reviews/game-accessibility-reviews-pc_c135/
Software such as Joy2Key may also be useful if he can manage a (partial) controller but not a keyboard -- it would also let him map things to only the right hand part of the controller.
There are lots of good suggestions below, but even solitaire or a simple turn-based puzzle game (which might be less frustrating because he can take his time with the motor control) will exercise his brain functions and let him practice motor control.

Any game without a time-limit, insta-deaths etc. Flash games mostly or those "simple" games on steam.

I'm so sorry about your uncle. The best games for him would be Neighbours from Hell becaue it's funny and really simple and some casual browser games. I hope he will recover soon.

Windosill is great, and its on humble bundle right now. its lovely, no pressure, calm and beautiful to explore and look at. I truly hope he recovers and gets well :).

how about some old school games? simple but great? bubble bobble, icy tower, mario, pac-man. maybe some bullet hell type of games? I don't really have examples though. some flash games are great too, I like tentacle wars, gemcraft, maybe hex empire.

You can buy him Amarita's Design Humble Bundle. Both Machinarium and Botanicula can be played with only one hand, there is no reading, and no time limit to finish any part of a game. So they can be played very slowly (there is one exception in botanicula, part with a race, it can be hard for someone recovering from a stroke) And games still are more of artistic experience than simple kids games. The story is told by pictures and symbols, with great hand drawn visuals. If you want more comedy experience I can recomend Sam & Max. It has a full dubbing (and in first season Polish dubbing is better than the original one) They are played by mouse only, and there are only few action parts - which are also very simple for healthy people. Your uncle might have some problems with them, but they should be possible to complete. And all of these games force you to think about what to do. It is a nice way to relax for me - but for someone regaining mental capabilities they should be challenging.
On the other hand - kids games can be a good option too. I recently won Little Farm - my niece loves it, and she is only 5 years old. It can be challenging game for someone like your uncle. But unfortunately it almost shouts at every corner "I am a game for kids". Your Uncle might feel offended by this kind of game - be careful with this kind of games.
And one more thing. I've meet few people who recovered from a strokes. And even if some of them never fully recovered, most of ther regained full mental capabilities. Contrary to what you can hear in Human Revolution - the mind may heal, while the body is not so resilient. So remember to never lose hope.

I try not to. It still always hurts to see how much someone can change, like my uncle did after the stroke. Thank you a lot for your reply, I appreciate all the help I can get.

Sorry if I sound cold, I don't intend to. But this really depends on how does he feel, and what he can. Just trauma can really get to a man. I only had a serious concussion, but that was no fun. It's often that people act really childish, but that seems really serious to them, it requres compassion from people taking care. Probably games with simple mechanics should be better, casual games and so. Match 3 games for example, you can get bejeweled on the Chrome browser and at billion different other places. There are also similar games like Zuma and Luxor. In situations like that people can feel really bad and become desperate. When I was in bet for 9 months after a car assident I played a ton of video games. It actually helped. But again, my head was pretty ok. But since your uncle was interested in games before it can be helpful. You may start with some simple casual games, and probably it'll get his brain recovering faster, making him ask for something more complex. Just take care of his becoming to tired, if the trauma is fresh even something like playing bejeweled can be really exausting. There's also a free rhytm game called Osu! It make seems filled with hardcore otakus, but if you want you can find a lot of really easy maps, and it requres only a mouse. Easy maps with nice music making a rhytm may be pretty good.
I feel for you man, just hold on, it will get better. It always does.

Thank you a lot, I really appreciate your reply. It helps to know about experiences from people who went through similar experiences.

Most card games should fit the bill. Good for mental stimulation and most aren't time limited and can be played purely with a mouse. Several of the bit trip games might be frustrating but are very simple to control and essentially require no reading.
Many Arknoid/Breakout style games can be played with just a mouse and require no reading. Shatter and Wizorb are both good ones on steam.

i'd say this too. i'm not much of a doctor nor a scientific, but I think the music rythm coordinated with the mono mode gameplay where you have to run into colored block and dodge grey ones using the mouse could be helpful for him, and it's a good game

Minesweeper. Seriously. It's actually a very simple logic puzzle and it's all point and click with no time limit. The only goal is to beat your best time. Best part is it comes pre-installed with every version of windows.

A lot of these have probably already been listed, by I would consider:
Hope your uncle gets better and this topic helps to bring him some happiness during this difficult time.

My uncle had a stroke two years ago, a really bad one. Long story short, it affected half of his brain and therefore his body. He used to be a very intelligent man and possessed a lot of knowledge about many things, most of it seems to have been lost, though.
Another thing is that he loved video games.
He used to play a bit of what I play. Dragon Age, Mass Effect, strategy games like Age of Empires, FPS with good campaigns, Tomb Raider. But those are a bit too advanced for him to play at the moment.
Half of his body is paralyzed, along with his left arm/hand.
What I really need help with is...
I need suggestions for a SIMPLE game he could play. Even though he got A LOT better over the months, he is mentally debilitated at the moment. To give an example, only a few months ago he started using the buttons of the tv controller correctly. And still it's not easy...
TL;DR
What I am wondering IS...
What games do you think would be best for someone with only one hand available (his right hand), where half of his brain is still recovering?
Take note that reading might also be very hard for him, so I need simple, very simple games to start with.
All help would be appreciated.
Important edit:
I will be sending invites to a few people to enter my group.
I will giveaway Dishonored - Game of the Year Edition to you guys who helped, and might even create a few other group GAs along the way. Thanks!
