Metroid Prime. It helped to create the ambiance that perfectly complimented the game.

Assassin's Creed 2. Jesper Kyd built a phenomenal OST out of the series' leitmotif, but the one I like most doesn't contain it, funnily enough: Florence Tarantella. A really festive song for a really memorable city.
