Like Football Manager, Prison Architect etc. Don't starve is ok but don't like Terraria or starbound though. You can also suggest anything addictive that I can waste hours on. Indies are preferred.

Dragon Age: Origins. Indies are ok, but they are mostly for timekilling, completing 100% achievements, and there is no more fun left in them after a few hours. If you like longer gameplay, and difficulty, try Super MEat Boy, it's on sale on Steam right now.

You didn't say how much you play a day... Dragon Age has a 70+ hours gameplay, that should be enough for some time.

The three games you listed there - Minecraft, Terraria and Starbound - have the highest replayability of any game I can think of. But I'll try to contribute. These are fairly well-known:

Dark Souls 1 - Very difficult, somewhat linear, can play New Game + after the game is beat
(Probably Dark Souls 2, but haven't played it)

Rogue Legacy - Difficult rogue-like-like, reminiscent of retro games, can play New Game + after the game is beat

Saints Row 3 and 4 (probably the others too) - Tons of collectibles and side missions to keep you busy.

Rust - it's in alpha and it's kinda rough right now, but you can spend hours and hours playing it

Dark Souls sounds too hardcore.Rogue Legacy looks good. Completed SR3 100%, getting SRIV soon. Not buying Rust now, heard too many hackers ruining the experience

It's a "bad port", but still by far the best version of the game. At least, once they remove GFWL... have Microsoft announced that GFWL's shutting down yet? Wikipedia tells me not yet.

Creeper World 3 is pretty cool. It's sort-of an RTS with a little bit of TD where your opponent is an endlessly-spawning goo that consumes everything in its path. You build up bases, terraform the land, struggle to keep your base dry and eventually gain a foothold, then crush your enemy. Then you finish the mission and someone on the leaderboards beat it in a tenth the time you took and you go back and see how you could make a few daring strikes here and there and pull off the impossible.

The previous two games were flash games and you absolutely don't need to play them first. The plot won't make much sense, but spoilers, it doesn't anyway, possibly even to the main characters. It's still entertaining to follow it. There's a full campaign, user-created content (with some scripting stuff for custom units and unique maps!), procedurally-generated maps, and damn hard procedurally-generated maps.

It's also going for 2 keys on Steam Trades, if you're cheap.

Edit: I hadn't watched it before, but the trailer on the Steam page is a pro-watch if any of the above sounded remotely appealing.

Deus Ex and Dishonored, but no mention of Thief? Sure, it doesn't have a moral choice system, but it's THIEF. You have morals. They involve getting paid, paying the rent, and while you're in there, picking up a little something for yourself.

Dungeons of Dredmor, Super hexagon, Cargo Commander. My personal recommendation would be Path of Exile; free and can waste hours (into the triple digits) mastering the game.
