What is the general rule of thumb as to how long an open bottle of unfortified wine can be kept for? I was under the impression that it would only keep for a week or two before spoiling (turning to vinegar?)

I've had a bottle of Red Moscato my favorite so far that has been open, and corked, for probably two+ months now. It was sitting on the counter top at room temp. (which is all of 58 F right now. Damn heating bills) I decided to open it back up tonight ant test the waters, as it was, and it tastes fine to me. Slightly different, but that is to be expected to any wine which has been exposed to oxygen some.

Anyhow, I know you really came here for a game, so here it is. Any input would be kinda neat I guess.

It's impossible for it to go bad, because you drink it all way before that could ever happen. Duh.

And the bottle isn't already empty right? I mean, I could understand an empty bottle sitting there... But... What is this? Is this real? You're trolling right?

Seriously though, I don't think that wine turns into straight vinegar in any more or less normal amount of time whilst you have the open bottle still corked and everything. In order for wine to be turned into vinegar it requires exposure to specific bacteria and to be diluted, etc. What you more likely mean is just the acetic acid that is the product of wine spoiling, which is part of what vinegar is. And even that takes it being fully open and exposed to the bacteria in the air for months. Though it may begin to taste bad to you well before then.

Neat. I was under the impression that vinegar was just a diluted acetic acid. The more you know. 80% of the bottle was gone in a day. Then it kind of just sat there on the counter top. Thanks.

Back in my drinking days I don't think I ever had a bottle of wine more than a few hours. :X
In fact, I never had a box of wine more than a few hours. -_-

It really depends a lot on the wine and storage conditions. I personally don't like to keep a bottle open for drinking purposes longer than a couple days as a general rule due to the experience of some rather foul tastings beyond that point, but it really does vary a lot depending on wine and storage. The more wine that is in the bottle, the fresher the wine, the more sealed it is, and the cooler/darker it is, the less oxidation will occur and can be kept longer.

How long a wine stays drinkable depends on so many factors:

  • what kind of wine (and what quality)
  • how much air was in the bottle (bottle mostly full lasts longer than a bottle mostly empty)
  • how air-tight was it (more air-tight will mean the wine will last longer)
  • what temperature was it at? (higher temperature will wreck the wine faster)
  • was it exposed to direct sunlight? (darker storage conditions make the wine last longer)
  • did you move the bottle around a lot, or shake it? (the more the wine moves, the sooner it gets wrecked)

If the conditions are right, leftover wine can be saved for quite a while, and have personally experienced wine still drinkable months later. If the conditions are all wrong, the next day could be too late. Generally, I'd say you've got about 3 days to drink your wine, maybe 4.

I'd say a couple of days (up to a week) in a fridge (processes in wine would slow down in cold temperature), but if it were some older, or collectible wine - I'd drink it in a few hours, before the original taste were lost.

I put open bottle in a fridge door and it is ok for very long time. Seal it good before.

Whenever I open up a bottle of wine, i re-seal it with a vacuum sealer. Works perfect, I have one like this and the wine taste fine after a few weeks. No problem. If you want a "real" guide see the pic below

I don't drink, but I leave corked wine bottles in my cupboard to cook with, and I've only had one spoil, and that was a big ass jug that I had in there for about five or six months. Usually it takes me about a month to use a bottle of wine.

Typically I don't drink it after it's been opened for more than a week or so... but usually, it never makes it past the first night for me. :)
