Also the only 3D Sonic games I ever enjoyed playing were Sonic Adventure 1 & 2, but I dont know how well they hold up in the modern era

Not very well, in my opinion. Camera angles, the effect on movement on the camera, and the responsiveness of movement were all somewhat lacking/annoying, and I think that's highlighted a lot more when contrasted against newer games. Despite that, they're the only* Sonic platforming games I was ever able to appreciate (as, compared to the strict action-platforming of the main series, the Adventure games had a style which also incorporated racing and adventure-platforming aspects, making them a lot better suited to my tastes), so I'm personally still inclined to favor them over the rest. Objectively speaking, though, I'd say that most any other Sonic game [among those which weren't awful] would make for a better general recommendation.
*The Sonic & Knuckles variations of 2 and 3 aside. Knuckles slowed things down enough, and had more of an adventure-platforming style to his special abilities, that the early games became playable for me [someone who dislikes action-platformers, but enjoys adventure-platformers]. The fact that that versatility of approach exists for the early games, definitely helps them games be among the most recommendable even now.

I remember jamming my Sonic 1 catridge into the top of the S&K catridge so I could go climbing with his spike-fists! Happy days

As someone who kinda enjoyed SA2? Not very well. There's also a lot of issues launching it on the PC port, but with enough wiggling and googling you can get around it (but may have to continue wiggling against it every fresh time you want to play).
Still, gotta love the chao garden.

Sonic 1, 2, 3, Sonic & Knuckles, Sonic 3D Blast, Sonic CD, Sonic Advance series, Sonic Adventure 1 and 2. Can't really go wrong with those.
Sonic 2006 and Sonic Boom are universally described as awful, avoid those.
The rest vary in quality a bit. People enjoy complaining about Sonic games for whatever reason. Keep that in mind when reading user reviews.

my fav 3 sonic games would have to be sonic heroes, sonic riders, and sonic adventure 2

Sonic CD is a bit of a weird side game with mechanics that never got used again in the series despite technically being part of the mainline games. I'd suggest starting with a more traditional classic game like Sonic 2 or Sonic 3 & Knuckles.
About the 3D games available on Steam, probably Sonic Adventure DX or Sonic Generations, Generations is really good. Sonic Lost World is another odd one with mechanics not used in other titles and fans have conflicting feelings about it, I personally like it tho. Sonic Adventure 2 on the other hand is a frustrating experience at least for me, having a third of a game be good doesn't excuse the rest of it being awful, specially when you're forced to play through the bad levels to get to the good ones.
Also you must play Sonic & All Stars Racing Transformed at some point of you like arcade racing games.

I also liked Sonic Lost World. I remember watching the IGN review of it and the guy playing it blamed the controls for crashing into a wall. I played that same section a while after that review was released and found that he was massively overexaggerating. It wasn't that the controls were bad, he just sucked at the game.

IGN is kinda notorious for criticizing things as flaws when in reality it's just a part of the game that they didn't understand. Weren't they the ones that uploaded a review of Sonic Unleashed and the gameplay showed that whoever was playing jumped over a spring and into a pit and blamed the game for it?
That said I know Lost World was patched after release with a number of tweaks to gameplay and that the PC port took those improvements and added more on top like simplifying controls and rebalancing difficulty, that's why on PC you can end up with dozens of extra lifes if you replay certain levels.

Yeah, I played it, but it's a bit more like Rocket Knight / Sparkster in the feelings, despite some links with Sonic Fandom's.
( Well... And If you like puzzles mixed with go-fast timed platformer. ^^' This game is really a feast, with it. )
Maybe these ones are a bit more close to classic's 2D Sonic games, I guess :

My favourites.
2D, Sonic 2 and Sonic Mania.
3D, Sonic Adventure 2 and Sonic Heroes.
Go through all of them from the first game to the most recent, it's more fun that way. Also, play the fan made games Before the Sequel and After the Sequel.

The only one I can personally vouch for to recommend since I've beaten it is Generations, but I'd say listen to others and play Mania as well.

Kinda surprised not to see more love for some of the more modern titles like Generations and Mania. Both of those have been very well received and would be a great starting point for someone new to the series.
Anyways, since most of the big hits have already been mentioned up to this point, throwing a slight curveball into the discussion. I find it amusing that the whole "gotta go fast" thing doesn't really apply to the games. It's more about maintaining momentum rather than going as fast as you can. In fact, there's plenty of levels where going too fast will get you killed on an obstacle you didn't have time to react to. Anyways, that's just my two cents. Hope you find one you really like!

I quite never got the appeal of the Sonic games. You mostly run at high speed and bump into enemies, losing your rings all the time if you don't know the levels. I mean, collecting the chaos emeralds and turning into that blonde hedgehog was kinda cool, but nothing too special. But I respect the nostalgia many people might have.

I would suggest going through the story of the original trilogy, then doing mania before going to modern games like Generations. People say Adventure games are good, but i didn't like them when i played them :/
Skip the Lost Worlds, it's a Mario game. IF you like spinoffs, try Spinball or Mean Bean machine.

As a kid I played Sonic Adventure 2 but none of the others. Recently I beat all the Sonic games on PC and I thought Sonic Mania was the best 2D one (maybe the best overall but that's a harder decision)
