What happened 6 days ago, lol? I enjoyed Skyrim as much as anyone else. It's a really good game. I only played the Legendary Edition (so not from when it was first launched), but that's the one thing that really bothers me. It's almost impossible to play a wizard-type character without taking a real long time to swap between favorite spells and so on.

Six days ago fo4 was released, featuring looting system w/o pauses. And I found it quite easy to play as a mage using SkyUI's favourite menu in skyrim.

Those are open world brawlers. Nothing RPG in them. :) Although, to be frank, this goes for Shadow of Mordor, which is an open world hack & slash. I hope you don't also consider GTA an RPG too. ^^
But if this is what you think makes a game an RPG, your best bet is probably the recent Metal Gear game, or if you want something cheaper, the old Gothic series. Or, if you want something easier, closer to the average console game in complexity (meaning the game always clearly telling what to do next), then Elder Scrolls IV: Oblivion or V: Skyrim. If you liked Shadow of Mordor, you are bound to enjoy TES games too.
Or, if you want something more action-oriented with really no worries about trivial stuff like quests, paths and whatnot, just an open world action game, then the Far Cry series.

Checked your played games. I'd say choose one of these: Rage, Far Cry (either from the start or starting at FC3), Just Cause, maybe even the new Mad Max game.
Maybe Fallout 4, if you have the money, it dropped most remains of its RPG elements too to be the ultimate open world sandbox action game.
If you want fantasy and not really shying away from challenge (meaning farming a lot to beat a cheesy cheap boss fight), then take a peek at Dark Souls II. It's also a semi open world hack & slash with a lot of item management close to some old-school RPGs in that one single aspect.

A controller is required (or heavily recommended) for Dark Souls I think... I do not have one :( I was hoping to get the Steam Controller but that is only coming to Australia next year.

DSII can be played with kb+m, it was a decent port. DS1 in unplayable without it. Utterly and hopelessly unplayable.
Still, if you don't want a fantasy setting, then the other stuff I listed should be good for you. :) If I had to pick one, I'd say Far Cry 3. It is an FPS, but has enough super lightweight RPG elements to slowly ease you into that genre to later try a little more complex stuff like Elder Scrolls, or later even the Witchers.

I don't think I would classify either one of the games you mentioned above as "RPGs". Both are action games first and foremost with very light RPG elements (Batman more so than Mordor).
How "open" do you want your world to be? This is the big question that often pops up when talking about open world games. Gothic 1 & 2 for an example have worlds where there are very few physical boundaries, but strong enemies will stand in your way, thus making it very hard to get many areas before you're supposed to. Morrowind on the other hand does not do this, but on the other hand enemies are forced to scale to compensate for this.
If you want games like Mordor & Batman, then you should probably check out games like Just Cause, Assassin's Creed (though these are worse than the above mentioned) & Mad Max (Possibly also GTA 4 & 5 and Far Cry 3).
If you want something more RPG-like then:
Fallout, Gothic, Risen, The Elder Scrolls, Utlima 7, Divinity (at least 1 & 2), Two Worlds (not a strong recommendation, but I did not find the game to be bad, just flawed), Might & Magic, The Witcher 3 & Arcanum.

Check brutal legend out, a pretty nice game if you're into rock and roll. Also the gameplay ain't too shabby either.

The gameplay is barely tolerable on Brütal Legend (my gods, that corralling the primates with the bike mission and the race on the narrow ledges still give me nightmares with those horrible controls and collision detection), but the game is still awesome! \m/

Like said above, those aren't really RPG games. Well, if you liked them then the Assassin's Creed series is good, too. Especially AC2, AC: Brotherhood and AC:Revelations with Ezio Auditore.
Far Cry 3 was fun, although the skinning of animals or looting baddies gets annoying after a while because it stops the flow. But then again that applies to lots of games.
Far Cry 3 Blood Dragon was a very funny homage to 80's sci-fi movies and music.
The FC games are mainly ego-shooters however.

Both the Arkhams and SoM are action-adventure in atmosphere, and the former are brawleres in game play, while SoM is close to a hack & slash.
AC series is a brawler/platformer action series focusing on some swordplay and parkour-like movement, Far Cry used to be a simple FPS with an open map (it was a new concept back then, but the actual product was more like a techdemo than a real game), and FC3 introduced some survival elements and some levelling like mechanics. It can be classified probably as open world survival adventure FPS.

There are some gamemodes on stuff like Arma II/III and GMod.'
Bully: Scholarship Edition is good since it's open world and it focuses on melee combat. Also, the story is great and very funny!
Dead Island and DI: Riptide are the best of both worlds. Horrible stories with bad voice acting. But it's awesome in co-op. Also, the combat feels really good and meaty.
Dead Rising 2 is just amazing. Try it.
Deus Ex: Human Revolution. It includes multiple cities which are fairly open. Worth trying out.
