I think you're confusing GMT and summer time.
I also live in GMT+1, but we only use this time zone during winter. When we change to the summer time, it's not actually the GMT time that changes, but the time zone we use. So we go from GMT+1 to CEST (Central European Summer Time), but the GMT+1 hour doesn't actually change, because there are country in that zone that doesn't change their hour for summer.
