There is actually a term in marketing for people like me (and probably you). Men who are between 25 and 35 years old, who are highly educated and who live in or near a major city tend to be into making elaborate food, so we get advertisement targeted towards us. I just wish I could remember the term :(

I love making food, but I don't tend to make very photogenic food (when you live alone, spending time making the food look pretty is wasted time, it just needs to taste good)

Oh, I can understand that. I've lived alone for years, which means a whole lot of cooking for 1. Although I've never really figured out how to make a single portion of anything. But that just means I get awesome leftovers to take for lunch!

I just make a lot and then I have food for 2 days. I was a student for quite a while (first studying history and then switching over to become an engineer) so making big batches of food just made sense (cheaper when you make it in bulk).

Its not quite as extreme when I'm doing Summer cooking, but in the Fall and Winter, when I big pots of things, it seems the size of the pot ends up becoming the limiting factor for the amount I make. I'm simply not capable of making a small pot of soup or stew. And when I make lamb stew, I usually end up just making it in a big, deep roasting pan.

Ah no, those are done quite differently. For Swedish meatballs you need minced meat, egg, onion, bread crumbs, a splash of milk & ground black pepper.

It's a red onion and chili marmalade (actually, outside of Sweden it would probably be considered a form of jam, but we have a slightly different definition of marmalade). You're not really supposed to eat it on its own, instead it's something you have with the Sunday roast. As for recipe, I don't really follow one, but here are the basics of it:
Use 3-4 large red onions and 2-3 medium sized red chilies. Chop them into smaller pieces (don't worry if they don't get perfectly even in size). Put them in a pot and add enough water to cover them and then a splash more. If they sell what I guess would be called "jam sugar" or "jelly sugar" (it's a mix of sugar and pectin) put 2-3 dl into the chili & onion mix, otherwise you'll have to improvise a bit (pectin should be available on its own and just use regular white sugar). Let it boil until the mix starts to get a bit viscid. Put it in a container and let it cool a bit before putting it in the fridge. Let it stay there overnight (if it's still a bit runny just add more pectin & sugar to the mix and let it boil a little bit more, and then put it in the fridge again).
