Whatever you do, do not use jello, fruitsalad or anything with mayo in your leftover burrito.
Personally, I like to use leftover omelet for my burritos.

No idea actually. It's not in our national cuisine :(
Thanks for the GA! :)

Basically any leftovers you have on hand. I've put spaghetti in a burrito (I mean in a tortilla). And some cheddar cheese. Texture was funny (the noodles) but if I said it didn't taste amazing, I'd be lying to you.
What did you have for dinner last night? Throw it in a tortilla. If it sucks, you learned a lesson. If it was awesome, more power to ya.

no beef, just vegies

French onion soup, minus the liquid. (The liquid is used to make another soup [chicken, omnomnom], or can just be eaten with bread as a broth. Yay, recycling! =P )

I can't answer this question, as I have not enough experience with burritos :p

No idea, never had a burrito and I have only a vague idea what it even is... Looks like the "Wraps" some bars around here sell, but I don't like those, too much salad/vegetable/... stuff in those... :P

Whatever you find in your fridge! Burritos are awesome with anything: sausages, pork, chicken, tomato...

Tortillas are great because you can put almost anything in them, add some hot sauce and cheese, and have a good burrito.
That said, things that I know work well are: meatloaf (or leftover hamburgers if you ran out of buns - really anything ground-beef-based), steak, hot dogs, anything egg-based, anything with a good amount of cheese, chicken/turkey if you do it right (try adding ranch and mustard instead of hot sauce, and use a white cheese), and I suspect fish could work but I haven't tried it myself.
Also, if you have either some salad type stuff or lunchmeat, add whichever of those you don't have and you've got a wrap!
Thanks for the giveaway!

I've never had a burrito (not really as big a thing here in the UK as far as I'm concerned...) but I guess any meat, salad... Anything savoury I guess?
