Well, you can technically do a single race online then quit. It let's you do that in between each race.

Such a shame for you this game is truly one of the best games on 3DS
But as the Phynaz said, there is no single race mode and it is a shame.
Some ingenious person as Yatterman are only playing one race online and quit before the second race begins.
To me, this technique is a bit complicated but it works!
