I have to admit to never having played any of the series yet
I did try the first one once a long time ago but the lack of subtitles, my bad hearing and an attempt to listen to a conversation through a grate or duct or something (I forget the details, but anyway I couldn't make out a word) put me off

Ezio first and Edward Kenway in a close second.

Well, Ezio is both the protagonist of most AC games and the most interesting ones - of course he will win. I like Altair slightly more than Ezio, and I find middle east more interesting (and less explored in videogames) than renaissance Italy, that's why I'll pick him.

Connor Kenway is my precious cinnamon roll, too good for this world, too pure

Ezio of course! Brotherhood was the first game I actually finished.

Not surprised why Ezio. Fully disclosed character, his youth, old age, motives. The longest protagonist in the serie.

Ezio Auditore made the franchise.
