Hello everyone! It's been a while since I've posted a discussion. Life has been good - I have a job (which is at times very challenging :| ), have a family, 3 cats and relatively healthy. Just a bit low on iron, hence the sudden need to eat more spinach to boost iron level. So far I've only had spinach with eggs... anyone have something more exciting to offer?

ravioli ricotta e spinaci, I guess ravioli are an international thing, but I'm not sure if ricotta e spinaci variant is known, google that :p

Also you should consider how do you cook your spinach (and food in general), as you could destroy its proprieties

Hey,
i am always low on iron, since 20 years+, because of a illness, so i know ALL that have iron.

To make it very short, concentrate on, red meat (so prefered cow) and all green vegetables (not only spinach because that one is good but not as good as a legend [typing error] said).
That should pimp your possibilities very much :o)

Pasta with spinache & salmon.

Take a coarse variant of pasta (fusilli or penne) for best effect.
Chop up a small tomato, a clove of garlic and a generous helping of spinach. Cook that for 6-8 minutes. Don't add too much extra water, the juice from the veggies will be plenty.
At the same time, cook pasta and grill a slice of salmon on high temperature.

If you really want to increase iron intake through your diet, swap the salmon out for squid or shellfish.

My girlfriend and I sometimes make this vegetarian curry with spinach, pumpkin and chickpeas.

That looks yummy.

I myself eat spinach cooked with water, salt and a bit of baking soda. Tastes good and soft, and i can drink the water as it was soup. I may also add a few bits of grain salt for a bit more taste to it after its done.
I dont accompany it with anything special, just eat it along with normal lunch/food that i have at the day.

Nonetheless over here they make "Esparregado" with spinach. I dont recommend to blend it into tiny pieces as it will taste heavier.

Spinach is super tasty but if I remember correctly even chocolate has the same-ish iron content (back in the day they messed up spinach's iron content by a decimal)

Anyway, just get some spinach and the mandatory garlic. They are great friends. Slice garlic thinly or crush, heat a bit ofoil, thrown garlic + spinach in, stir and be careful not to burn the garlic. Then add some cream, salt, nutmeg and/or white pepper if you like it a bit spicy. You can add a bit of butter to make it even creamy (I wouldn't really use margarine - tried it as I only had it but even just a bit made the whole dish smell of it), then shredded cheese of your choice (optional). Make sure to have enough saucy thing to help the cheese melt without burning / starting to grill. Then you can add your 3/4-way cooked paste, rice, bulgur etc to it and finish it up by heating them up together and you just need to mix them together.
You can do it in 10-15 minutes and it makes a really tasty dish. Healthy? depends on the amount of cream, cheese and butter used, but not reeeally a superhealthy one, more like a great comfortfood of spinachy-cheesy-creamy goodness.

Spinach, as has been pointed out, is not as rich in iron as people believe, and worse yet, the iron that is in spinach is not in a form that's easily absorbed by our bodies! That said, spinach is still healthy, and tasty, so learning how to use it is still not a bad thing!

If you don't want to just gorge on red meat (which there are plenty of good reasons not to. not saying don't eat red meat, just saying don't over-eat it), then fish & shellfish makes for good other sources of iron.

While not in its ideal form (so you won't absorb all the iron), things like lentils and chickpeas are also decent sources of iron.

Fnord pretty much nailed it, but:

Spinach Smoothie

Peel bananas and apple, cut into slices and put into a blender. Wash spinach leaves and add to blended. Squeeze juice of 1 lime (can be replaced with orange or lemon) into the blender. Add water as needed.
Blend until smooth and serve.
