Never played them, but I hear the Thief games are nice and stealthy.

Lone Survivor is sort of a Stealthy Horror game,can really scare you though :p

In answer to your question: Yes, Assassins creed is fairly stealthy, though it's more of a "blending in" stealth as opposed to magically going invisible (like some games). It's also about being sneaky to get surprise attacks.

The original AC pretty much demanded stealth and tactics, whereas the sequels you can kind of get away with brawling a bit more if that's your thing.

Velvet Assassin is a stealth only game. You can go in guns blazing once you get guns, but die so quickly that it just might be realistic.
