Well I'm not the quickest by any means, but my time is still on the leaderboard.

Here's how I do it:
Start with making the frame - edge pieces are the easiest to identify.
As you do this, sort all the others by shape - so later you don't need to hunt through the whole pile for a shape you need, you just go "A piece with four pips? It's in this row."
And as you go sorting the pieces also look out for easily identifiable shapes and colours. In case of my puzzle, the bumblebee and the flower it's sitting on are the only ones in focus, so their pieces are easy to notice and you can connect them as you go or move them aside for later if nothing immediately fits together. Same goes for the sky (no other big white blobs in the picture) or the black board on the right (it's the only thing with that particular shade of dark grey).

Although I remember seeing someone post a video of a jigidi done really quickly, and they didn't really sort any pieces - I guess some people are just way better at pattern recognition.
