Is this one of those game where you have to watch 10 hours of tutorials before you are even capable of starting a game, let alone playing it?

Even ignoring the fact of how am I going to pick a synergistic set of bonuses if I know nothing about the game mechanics, I just tried to make an archer, and I am pretty sure I spawned with bolts but no bow, and then was easily killed by the first tiny animal I came across.

It doesn't do a good job on teaching you the mechanics on its own, no.

Try out the tutorial? I thought it was fairly easy to get the hang of, although the game deliberately means to kill you. You are supposed to die and then learn from your mistakes and make it farther until you can beat it. The randomness of it could also mean you get a harder or easier run. Also you spawn with a bow in your inventory if you pick archer but it isn't equipped.

If you feel that the game is too complicated, then you might want to disable all DLC in the DLC tab on Steam. The base game has far less skills etc. and might be a little easier to get an overview of it all.
