Potatoes are incredibly important, but also dangerous. They grow in otherwise really inhospitable places, and provide a ton of nutrients comparative to other crops, especially their high potassium. If it wasn't for potatoes a lot of civilizations probably wouldn't have existed.
Unfortunately our (read: Americans) love of french fries has let to a demand for only one kind of potato being grown, which leads to a monoculture. This is probably very bad, because the last society that had a near-complete monoculture of potatoes was the Irish in the mid-1800s. Yeah, that didn't turn out so well
