Birgirpall is one of my favourite. He doesn't upload regularly you could say, but when he does, dear lord is it funny.

Then there's Seananners when he plays with Diction, Chilled, Gassy, Utorak, Hutch, so on, so on, those are always fun to watch too.

Well to be honest, back in the day I used to like his videos.

OverTheGun. He may not have the best track record with completing the projects that he starts (then again, neither do I), but the videos that he does make are amazing.
SSoHPKC is one I used to watch all the time as well, but haven't had the time to check out any of his recent(past 1 year) stuff.
Then, if it counts, LethalFrag. Technically a youtuber, but he just does twitch now.

TotalBiscuit, CorridorDigital, ThePortraitArt, Vsauce, LindseyStirling, 2CELLOSlive.

TB: Mature and straight view on games and the environment that surrounds it, would love to have a word or two with him.

CorridorDigital: Started off nearly at the same time as FreddieWong, but have evolved so much in their output quality, as of now any video they release gets a bigger and better focus on production, rather than effects, which is great and shows an amazing ability from both guys.

ThePortraitArt: I hate him as much as i love him, the guy has an incredible ability to draw any type of subject, and it's a constant source of knowledge for me when it comes to drawing.

Vsauce: Great direction in every video, each line is thought out previously, making every single one count and tell something new and different each time, while still staying on topic, i like to think of it as a modern day Beakman.

LindseyStirling and 2CELLOSlive (among others like Apocalyptica) are simply incredible artists that have managed to reach a different audience with instruments that are known for being extremely orthodox, formal and clean; they went against the current and still managed to make the instruments they play as beautiful as they are, my respect goes to them.
