If trading on Steamtrades, pay attention to the rep of the other traders. Someone with higher rep (and hopefully comments about being trustable with keys) would be a good sign. Be prepared to go first though as you've got no rep yet.
Trading keys is always at your own risks however, no matter who you end up trading with. Just remember, if the offer seems too good to be true, it probably is.

Trading keys is never "safe" and is not encouraged by Valve at all.
It's all about trust.
Possible signs for a scam:
1) offer is too good to be true
2) other person is adding you directly and links you a steamrep / steamtrades profile that does not match his Steam ID (always check!)
3) other person's Steam account
3) a) is 5 days old
3) b) is private
3) c) has only 7 friends
3) d) has only 3 games
but on the other hand: if the other person has 300 games in his library and a 2 digit steamtrades rep, you should not insists that the other person goes first if you have less rep.
TL;DR: only trade stuff that can be put in the trade window, trade everything else at your own risk.

Please, I've almost exclusively traded keys on steamrep, and I've never been scammed and only a few have even attempted (though probably more when I was first starting). Using a middleman is a lot of noise and is difficult and unneccessary. Here are some guidelines -
If people add you as opposed to you adding them, ask for their steamtrades account and then click on their profile from there and make sure you're friends with the account and that is the person you're talking to. If they say they don't have a steamtrades or try to point to some other source of rep, MAKE THEM GO FIRST OR DO NOT TRADE
The person with the lower rep should always go first. When you first start out, only trade keys with high-rep (20+) traders. It's usually safe to go first with these guys.
Even if a deal is sketchy, you're not scammed until you give your key. So if you make them go first and you fully activate theirs before sending yours, you can avoid being scammed.
