You can't go wrong with Shifts and HP. Both series are different though. Shifts are simcades and HP is pure arcade with constant drifts in the corners. From my experience I liked the first Shift the most. Avoid TR (I got a feeling it will end in some bundle soon) and Undercover.

Hot Pursuit for $5 is a fantastic deal. Grab that if you only want one, throw in Shift/2 or Undercover if you have a bit more to spend.

I enjoyed Undercover alot on the PS2, but I don't think the PC version will work with a gamepad or controller :(

I would choose Shift 2 OR NFS Hot Pursuit. It depends what you like, free-roam style gameplay or closed race track game.
