I like playing in a private server with only a couple of friends, just doing our things, finding places, looting, crafting, surviving. I've never played in servers with strangers.
There's something wrong with the latest update I think, I get very low FPS for no reason... but I'm guessing it'll be fixed ;x

I'd recommend downloading the Clan Quest mod. It integrates the most recent [or one removed from such, if behind] unofficial patch (which is necessary to have, as it adds a ton of core fixes), as well as several other key mods.
While the base Unofficial Patch is just fixes, the Unofficial Patch+ also adds restored content [as well as tweaks a few things- which unfortunately dilutes the experience of playing as a Ventrue by adding Ventrue dialogue options to Tremere, so you'll probably want to disable it for your Tremere runthrough- otherwise it's worth activating].
The Clan Quest mod's included mods aren't ones you'll want to bother with to start; But you'll want to activate the Frenzy mod for your Gangrel runthrough, the Companion mod for your Toreador runthrough, and (while less crucial, as an option) the Arsenal mod for Brujah.
Those first two are pretty crucial for making those two clans stand out in a manner that follows their lore [as they don't really deviate from the other clans well enough otherwise]. Likewise, I'd recommend only using those mods for those two clans, so as to keep that distinctiveness of play.
The Camarilla mod is a good conversion mod for if you want to spice up gameplay after the first few runthroughs, but (like any of the other mods I haven't listed) shouldn't be worried about at the start.
Save Malkavians and Nosferatu for later runs- Malks have a completely unique runthrough, and Nossies are the stealth-challenge runthrough, so they're a bit trickier than the other clans.
You're in for an absolute blast. :)

I think I did just under 50 runthroughs of the game over the years before I got completely burnt out on it. :X
BloodLust ShadowHunter is supposed to be a spiritual successor (and it's been rather well received), so it's worth a look for you as well. Note that it takes more of an action-rpg approach to things, however, so it's a bit removed from that special vibe VtMB has.

Oh, and make sure to use the custom histories to further emphasize the characteristics of each clan, and the playstyle you intend.
[I believe the unofficial patch readds them automatically, but if not, just google how to load them up through the in-game command console].
They really add a lot in making the clans distinct from one another. :)

I think I played one full and several half-runs (I hate Hollywood sewers, the monsters creep the fuck out me) without mods, I think I have some ideas what could be those "core fixes" I tried to reduce humanity to minimum, but it didn't change much. I tried to break Masquarade 5 times, it took me 20+ minutes of nonstop murdering anything that moves in Downtown, using a Tremere. I was literally covered in blood, shooting blood spells and still :D

I don't think you actually can drop Masquerade below a certain level without quest detractions to it. You shoulda been getting plenty of hunters, though, even still.
A lot of reducing humanity is in letting yourself frenzy out, and dialogue options- though if your humanity drops to 0 you automatically lose [due to no longer having any control over yourself], so that's probably not something you actually want to aim for.
Either way, the game was rushed out due to Activision mishandling things (and deliberately sabotaging Troika). Add in that Troika (now Obsidian) are well known for their bugs to begin with, and you got a pretty poor release result. With Troika having been pushed to bankruptcy, they never released as much in the way of official patches as was needed (and in fact, most of what they did release had already been done pre-launch, but apparently Activision prevented them from including in the release copy).
In any case, the fan patching has done wonders for the game. :)
