Bought the 2014 bundle thingy and i'm curious if there is any must have DLC's? WIll probably skipp all the music dlc's and such.

There are 2 must have DLCs:
Art of War
Common Sense

El Dorado, Wealth of Nations, Conquest of Paradise, Cossacks and Mare Nostrum aren't bad either and all matter if you have specific priorities. Colonization, trade, playing natives, playing hordes or playing a naval power.
I think Wealth of Nations is already included in your bundle, not sure though. Anyway, if you aren't sure if you'll like EU4, pick those 2 essentials first. And the rest later.

None of those music or unit packs are important. They just bring some extra flavor.

Edit: Oh, every new PDX player should get familiar with the excellent wiki. It also explains what all those DLCs have to offer.

I have almost 1k hours in CK2, but I never watched any tutorials.
But I can recommend you 3 Youtubers that are most well known / respected in the PDX universe:

They all know what they are doing and should have something to introduce you to the game. I just can't provide you a specific video. Maybe ask them which of their videos they'd suggest you. All of them are on Twitter by the way.

your first link (arumba) has a playlist for beginners, i'm really enjoying it since he draws similarities/discrepancies between EU IV and CK2 which really helps me since i know how to play EU IV (very shallowly and with only big countries).

Play the tutorials, it's kind of boring at first but if you get the hang of it then it's so fun to play.

Might be kinda just me but I feel most strategy tutorials are not good enough for me to "grasp" the mechanics. Seeing a playthrough with someone saying i'm doing X because in the future if i can do Y i can accomplish Z is much simpler for me then reading/playing explanations on all mechanics one by one.
Note i never played CK2 tutorial but HOi IV and EU IV tutorial are very boring and feel "incomplete" so my opinion above might be very stupid. The only paradox game where i felt the tutorial was good enough was stellaris.

I learn the hard way.
Play an hlur, realize I ducked up, start over, 5 hours later realized I screwed up again, start over
Eventually I figure out game-winming (breaking?) strategies. i can barely play Ck2 now that I know how easy it is to conquer the world if you're jewish

The full on expansion DLC's are all pretty much worth. I can't say they are worth the full price simply because there are so many but each of them add a lot of really cool features. There are also a TON of music and skin DLCs, all of which are completely skipable.

I Also wanna add that the game gets free content with every major dlc, I spent almost a 100h with only the base game. Also if you play multiplayer with a someone who owns the dlcs, you both can enjoy it.. If you are into historical-strategy games, I highly recommend this game.
