Seconding Band of Brothers, arguably my favorite WW2 era series ever. It's cousin "The Pacific" is not as strong, but still a worthwhile watch.
Thin Red Line, The Longest Day, Private Ryan, Inglorious Bastards, Escape to Victory, The Pianist, Downfall (Der Untergang), Das Boot, The Great Escape, Bridge on the River Kwai, Cross of Iron, and Come and See are all really great WW2 movies. There are even more documentaries like The World at War (brilliant) which have to be seen.
Vietnam my favorites are less, but Platoon, The Deer Hunter, and Full Metal Jacket are must sees.

Like others have already suggested, I can't say enough good things about Saving Private Ryan, Full Metal Jacket, Platoon, All quiet on the western front, Inglorious Basterds, The thin red line and Black Hawk Down.
Apocalypse Now is also very good.
You've got quite a marathon ahead of you if you haven't seen any of these movies at least once!

Valkyrie, Three Kings and Joint security area
The first one is WWII about an assassination attempt on Hitler, the second one is from the first war in Iraq, and the third one takes place in the DMZ on the borders of North and South Korea.

Captain Conan is one of the best war movies i have ever seen, good old black and white movies are full of masterpieces ( funilly enough even the propagandist ones filmed during ww2 are often less propagandist that today's one ), that one movie where the guys refuse to fight and are executed for that is great, france ww1, the longest day is good, the last of the mohicans is good, blackadder ww1, baa baa black sheep, mash... the koreans have some excellent war movies.
The burmese harp is a classic as well, the bridge on the river kwai... Das Boot..Platoon, Full Metal Jacket...
The Deer Hunter, The Great Escape... Akira Kurosawa stuff. El Cid is an epic. City Of Life And Death, the whole gettysburg tryptique is ok.
