I can only say for sure about the ones ive got.

If you're into kung-fu and melee fighting(combos and all), DRUNKEN FIST and ZODIAC TOURNAMENT are a must; With both you get all theres is to it in the game. For added kung-fu flavour the Monkey King adds a little bit of fun, but its only aesthetics with few features, only if you know Journey to the west and is a fan. Movie masters is the same but with two kung-fu outfits, but i left that one for later (spent too much).

Beyond those i also got the Nightmare one(that you didn't added to the list). From the mission packs dlcs is the most different, with a bunch of different enemies that adds variety to melee fighting, albeit only on a parallel campaing of its own.

From what ive readed elsewhere Zodiac-Nightmare are into the 'best', that people also includes Swat and Year of the Snake.
