Risotto is relatively easy and cheap to do, you can put pretty much anything in it and it's an easy way to impress. I suggest pumpkin, leek + sausage or apple + fontina cheese if you are feeling adventurous.
I've recently discovered the pleasure of grilled cheese (the purists would call mine melds, as I put extra ingredients in them). Try some meltable cheese + ham (or smoked ham) + dried prunes cut into small cubes. It probably falls into the "sandwich" category, though.

Grilled steak, pork, and sausages are also really good on the BBQ, can always add those in addition to the hamburgers and hot dogs if you want something different and have picky eaters. When I make pizza I often cheat and use my spaghetti sauce so all I have to do is add cheese, you can easily freeze it for later use. You can easily tweak the recipe and make that into chili instead. Sticking with Mexican theme, why not try fajitas? You can also change your pancake recipe a little bit and make crêpes, stew some fresh/frozen fruit to serve with or warm your favorite jam. French toast and oatmeal are also good in the morning and allow them to add their favorite toppings. I assume that is roast chicken and vegetables, can easily change it up to any style of meat such as roast pork or beef. Could also turn that into a stir fry and try different sauces for it. Since you enjoy chicken, why not change it up and make homemade chicken noodle soup with fresh bread of the side? You can turn it into a chicken stew with dumplings easily enough as well. Adding different herbs can also make a big change to the dish as well.

TLDR: Making simple changes can alter your meal, don't fear tinkering with your normal recipes.
Sweet and sour meatballs are a favorite of mine.

I'm lazy and only make easy things... or things which can be eaten as leftovers so I can avoid cooking the next day...
Twice baked potatoes - not a lot of steps, takes some work to prepare, but reheats fairly well. I usually make a bunch - bake the potatoes (I prefer the bigger ones for twice baked), scoop out their insides, mix the insides in a mixing bowl with butter, cheese, eggs, sour cream, and random things like olives, bacon, ham... stuff it back in the potatoes... add more cheese and re-bake...
Sheppard's pie. - I do the bottom layer cooked ground beef... next layer mixed veggies, next layer buttery mashed potato's topped with shredded cheddar cheese, cover with foil and bake.
Stuffed and baked bell peppers - stuff with seasoned beef or chicken, rice, beans, cheese... etc...
Fajitas - buy steak, cut into chunks, bell peppers, onions, cheese and tortillas... and follow the instructions on the fajita seasoning package.
Fettuccine... - Sometimes I make homemade sauce, but if I'm lazy I do the jarred. Adding a little feta, blue cheese, mozzarella or Havarti makes the sauce richer and Parmesan is a must... for the meat I prefer shrimp.
Tuna noodle casserole - I find cream soups icky, so I mix the cooked noodles with sour cream, eggs and french onion soup mix, tuna and small sliced celery and top it with crumbles of Parmesan, butter and bread crumbs and bake.
French dips - french or sourdough sandwich rolls, lightly toasted. I arrange heaps of sandwich portions of roast beef on a plate, cover the portions with cheese and nuke for a minute or two, slide them on the lightly toasted rolls and serve with au jus. You can buy special au jus seasoning... but I usually just use bullion cubes. I've even used season packets from beef top ram-en added to boiling water.
Meatloaf , if you get the right mix of ingredients and like ketchup and or BBQ sauce, it's not so bad. If it seems dry going into the oven it will probably turn out dry, so don't be stingy with the sauce and seasonings. I think the basic meatloaf recipe with seasoned bread crumbs, ground beef, eggs, ketchup etc... is the best and don't really like the ones with things like salsa, brown sugar etc... Always do the hollowed out zig-zag pools of ketchup or BBQ on the top. Sometimes I give my meatloaf a pair of rabbit ears, a tail and a face... because one of our bunny's nicknames is meatloaf.

Add a basic salad - lettuce, cucumbers, tomatoes, olives, avocados and dressing... so family can convince themselves they are eating something healthy.

Fresh salmon, spinach and premade puff pastry. Wrap seasoned spinach and salmon in pastry and put it in the oven (time and temperature according to the info on pastry package). Quick, easy, tasty as hell and healthy ;u;

I love chickpea - you can do anything you want with a can of it.

You can also look for premade pierogi or make them by yourself.

And for a chicken I've found a recipe that is sooo delicious anyone will fall in love (I'm using drumsticks instead of wings though).
