Uncharted: Drake's Fortune
Uncharted 2: Among Thieves
Uncharted 3: Drake's Deception

Release order is always the best choice.

I've seen people that say games should be played in chronological order instead, such as Metal Gear Solid 3 before the rest of the series, or playing the Devil May Cry in this order, 3 1 4 (and never 2 apparently).

That however can ruin parts of the story you shouldn't know normally.
