Not exactly a fish, but as for aquatic life I'm fascinated by mantis shrimp. They're so neat!

I've always had a soft spot for coelacanths. They're the OG survivors, just chilling out at the bottom of the ocean near Madagascar for millions of years when everyone though they were gone.
