Need help setting up my first giveaway

create the giveaway and then add the winner to your friends list and send them the gift :) - from what I can see it really is that simple :-P - what the evil one of the birds below says :)

When creating a giveaway, select "gift" instead of "key" under "Type of Giveaway" (this is not obligatory, you can select "key" and type something like "is-a-gift-will-add-winner" in the key field). When it ends either send gift by email to the winner (winner's email will be shown to you) or add them on steam.

You don't necessarily need to add them as friends on Steam. You can send a gift to an email address so you can send it to the email address people use on steamgifts. I would suggest you add a note to your giveaway saying how you want to send the gift (either via email or become friends on steam).
