You can change Category without making a new thread. Just click the green Open Button in the upper right corner and select Edit.

Not really. When you go in the Discussion page you can see all the threads; the categories work as filter, to quickly find what you may be interested in :)

I see.. I'll change it then. Obviously I'm very new to this, I just came on here today to try and see if I can get a few games to use in a giveaway for my group, I saw discussions, and, well, I thought it would help give us an advertising boost. Apologies to anyone who became annoyed.

No. I bet most people don't use the filters. I for one never use them and just check out the first page of threads.
But even if it did matter, you should still stick to the categories, no matter how important it is to you. Otherwise what's the point of the categories?
