Seeing the odds and money screen made me think it was some kind of online match betting platform, so some searching down that route led me to Salty Bet. I immediately bookmarked it and can see myself spending some time watching those matches, if for nothing else to just appreciate the gorgeous spritework and amusing absurdity of it all. :)

Yep. I knew that last image would give it away.
It was a 2003 game released by LucasArts and designed in part by Lawrence Holland, who also worked on the X-Wing/TIE Fighter series. I thought at the time, "Cool! TIE Fighter set in WW2!" It turned out to be more of an arcade flight shooter and less of a full on sim (because CONSOLES), but I enjoyed it nonetheless.
And yes, you can unlock X-Wings and TIEs in it.

Hint: The graphics are not a gimmick, they were cutting edge for the time. This game is not available on Steam, however a very different take on this title was released almost exactly 20 years later, and that latter game is on Steam.

Sure is, I just didn't this time for whatever reason, but it worked out in the end! I liked how you borrowed the first image from our own SleepyCat. I wouldn't call this title obscure, though. It's been bundled five times, so that means I've seen it given away lots here, too :)

You know, it's funny how you emphasised the knowing bit here, because I first intuited (in a subconscious manner) that it could be this game without being able to tell you the explicit reason. I was broadly familiar with this title from the Steam page and screenshots after seeing it being given away, but that was the extent of my knowledge of it. It was a true gut reaction in this sense, like a feeling based on some amalgam of vague imagery and loose concepts that were semi-activated when presented with Fet's visual stimulus, just sort of lingering there without really breaking through to proclaim "yep, this is the one". I think this may be why I just dismissed the hunch in the beginning. It was only later when presented with further information that I acted on the intuition and made an effort to corroborate the initial feeling. All of this is to say that... well, memory is strange sometimes. None of this is to take away from your point though, I just felt compelled to share and bore everyone to tears with my rambling account. You can carry on with your lives now...

Actually, it is Star Control 2 : The Ur-Quan Masters but it is close enough.
