Eufloria HD (https://store.steampowered.com/app/221180) fits the description. It's a little bit of strategy, but it has very simple mechanics and it's easy. It also has a very nice, relaxing soundtrack and the sound effects are easy on the ear.

its a 3 layered find the object game that is 100000000000000000% better than any other 'hurr durr alice in wonder shit' object finding games nowadays!!!
the 3 layers, background, middle ground, foreground. with some objects constantly moving around, the POV and FOV are constantly changing with each footstep you make the character move around the environment ( middle ground) WOOOOOOOOOOOO!!!
and good gods n gravy. the soundtrack! deliciously beautiful like the peculiar and certainly originally different artwork that is the game itself!

Minecraft creative mode or even with something like the pixelmon mod on. Or both. Honestly the Minecraft music is relaxing and when enemies aren't a thing the game becomes really chill. Building and seeing what you can make even if it's nothing impressive. Although by now most people have played it out to the point of boredom. Sorry if thats the case. It's the first thing that comes to mind when I think of chill gameplay.

Oh wow. In that case I highly recommend it. It's very atmospheric... The music and weather will definitely relax you. In creative mode... Otherwise it can be stressful surviving. XD Building though in a giant world all to yourself is indescribable. If you decide to give it a try I hope you enjoy it! I highly recommend looking up creative mode commands to make things even easier.

If you like puzzles, there is Blockwick 2
a few puzzles require some thought and are a bit tricky, but for the most part I can play the game while watching videos. depends if you want to :illuminate:
(not on sale, though, so depends if you want to wait or pay the bucks)
I put 34 hours and I think I'm almost done, but some of that time is me being away and some is because I'm mindlessly solving while focusing on something else completely since most levels are really easy.
