From what I experienced:
5 slots.
Create one GA = 4 slots
Delete that GA before it ends = 4 slots
You hit the time when that deleted GA has ended = 5 slots
So when you delete the GA after it ends, wouldn't it be the same?
Either way, OP shouldn't worry too much about it, it's simple as creating more gibs or asking support for more slots :3

But, don't you have to ask support to delete the giveaway for you anyway? Maybe, if you point out that there was another GA that had so many winners for that soundtrack, they compare the winner of yours to the winner-list of said giveaway and re-roll until they have a "mismatch".

I think you would have to wait until every one of the other winners have marked their gift as received (as MagnificientOne said), but then it should actually work. I am pretty sure that support has to deal with a few of those "roll until you have the right one" requests, due to people just entering for giveaways to help their friends get cv and then of course refusing to accept the win until the right one is rolled.
I'm sure support has it's methods and doesn't need to tell you about every "roll" they make, when you give them the permission.
So one ticket would be probably enough.

Here's some advice, stay away from DLC-only giveaways, because they can be a nightmare with many people not realizing they already own something, and the Steam API often doesn't allow SteamGifts to detect that, so DLC you own is not seen as already being in your account. I tried giving away a DLC recently, and after three or four re-rolls, I realized I was wasting my time, but more importantly, I realized I was wasting SG support time, which is very precious. I'm not doing any DLC-only givewaways anymore.

If you don't want to lose a giveaway slot, then just reroll. It's not like it's your fault that some of the giveaway winners had already won the game.

I did a giveaway for the Giant Soundtrack, and the first winner had won the item already (another giveaway for 20 copies had ended within minutes of mine). I requested a re-roll, which was approved - but the new winner had also already won the item. There was only 39 entries (for the one with 20 copies), and only 24 on mine, so there's a huge chance that if I re-roll again, the new NEW winner will have already won it.
Obviously, I'm not gonna be a dick and re-roll again (the poor support members could get up to 23 re-roll requests from a single giveaway), so I'm just gonna delete the giveaway in a sec here. My suggestion (if it's not already the case): in these situations, deleting the giveaway shouldn't penalize the GA creator with losing a giveaway slot.
