Watch out for crashing due to mod conflicts, if there was no such thing(or super rare) I feel like I might have bought it on sale...

Mod conflicts happen if you're careless and don't read the description of the mod. Most overhauls need compatibility patches to work with other mods. I for one haven't had any mod related crashes with Skyrim(loads on fallout though, less stability?). Running 10 mods at the moment. Just need not be stupid when choosing and installing mods.

Make sure to get the SMIM (Static Mesh Improvement Mod). It, along with the official, free HD texture DLC from Steam, makes the game look a console generation better than the Xbox 360 / PS3 versions.
If you want the SMIM, get it off Skyrim Nexus as the file is updated more frequently and is currently more up-to-date than the Steam Workshop version.

The only 8K mod I can find on Skyrim Nexus is for Stars/Nebulas. Do you know where I could find 8K mountains?

I have the 360 version, paid NZ$5 when a friend had their Arcade die. Maybe if it was cheaper or I had a lot more cash, I'd get on PC.

Not you are not alone. I would not even play Skyrim without mods. I cannot stand some things in non-modded Skyrim, like too much conveniant and low difficulty gameplay.
Anyway for modding I want to recommend two things : Nexus Mod Manager and BOSS. Those two things are essential to make modding easier, more powerful and faster.

It took me close to 48 hours to mod Skyrim but damn was it worth it. I wouldn't have actually bought it if I couldn't have.
Enough with complicated verbal tenses now, and on with a simple fact: vanilla Skyrim SUCKS, it's ugly and approximately uses only the, like, 3% of the potential its world could achieve. As usual, Bethesda gets a cannon whcih could shoot for the moon and points it downwards instead.

I recommend you to use BOSS, Nexus Mod Manager and Wrye Bash to manage your mods and avoid any conflicts. Also, the stronger your PC is the more mods it'll be able to handle.
I'd also like to mention how scripted mods work in Skyrim, it's different than in the other Bethesda games - once you install a mod that contains scripts and you save a game, that script stays in that save forever. They will stay there even if you remove the mod, and script leftovers from removed mods can affect performance and even make your save corrupted, but that's not always the case. To be 100% safe, if you want to uninstall the mod, remove it and go back to the save where you didn't have that mod installed. Note that many great mods that add new features use scripts, especially those that require SKSE (Skyrim Script Extender).
Another thing to note is that the game will crash if your game uses over 3.1 GB of RAM (it's a bug Bethesda probably won't bother fixing). I know it's pretty hard to get the game to use so much RAM in the first place, but it may happen if you have many texture mods of crazy resolution (8K and stuff like that).
