Best conference of E3
One game that comes up off the top of my head (and has some exceptional ratings: ~95% OP, 8400+ reviews) is Slime Rancher (http://store.steampowered.com/app/433340/Slime_Rancher/). It is Early Access, but has a real ton of content despite that honestly seems like a complete game already. It was also had a huge update a day or two ago. It is a bit more pricey than other games, but as it was in a bundle before and the steam sale is coming up: You could get it on sale or trade for it below the $20 price.
It does fit all of your needs from my experience. Easy to distinguish colors, minimal text (that is a decent font size), the game operates at the pace you want to play as (so it can be slow, and is a very relaxing game at that), and has full controller support.

Maybe try puzzely games, for example "Human Resource Machine"
or point and click games. (A rather recent release I enjoyed a lot was Thimbleweed park for example)
Or if you want something more demanding you could go with turn based strategy. (Pit people is a game I could reccomend)
All of those games are not time dependent so I think you'd probably be fine playing them.

If you have no problems crying, the three seasons of The Walking Dead by Telltale are superb. I also recommend Tales from the Borderlands, a surprisingly good game from Telltale as well.

I experienced something similar many (many) years ago. My fix was to play Final Fantasy and Zelda on the Gameboy. If I were you, I'd probably ignore PC games and go straight for a 3DS too. You'd certainly find plenty of JRPGs to keep you entertained. A Switch would be neat too naturally, if you manage to find enough games of interest.

Hmm... pretty well any farming sim will do ya I think. Harvest Moon, Story of Seasons, I see you have Stardew Valley up there already...
Minecraft, if you want to avoid stress you can always just go in creative mode
Dating sims/visual novels are always a good slow time. That's just a matter of finding good ones lol... genre's a bit diluted on steam.
Any of Telltale's games would probably work as well.

Well I would not recommand you HOGs, maybe easy ones, but a lot of them can be pain in the eyes if you know what I mean.
I would not recommand LEGO games also, all of them are pretty "quick", there's a lot of fighting and also finding littlee thingies.
Stardew Valley may be cool though. Yes, there's fighting and collecting but if you focus on farming and interacting with people in the city I think it'll be fine for you. Plus it can be relaxing :)
Other games... The Sims series maybe? It depends of what you like of course. Bet I think you can do a lot of inteesting things in 2 or 3 like travelling and quests

Kind people of SG, I need some help.
In a few weeks I will be having an operation on one of my eyes with the post op effects including sight loss for up to 2 months. I also have to avoid pressure for 2 weeks around the eye, e.g. picking something up, reading. I need games to play in this time that follow a set of guidelines.
Game ideas so far (haven't played them so do not know if they are truly suitable) :-
Stardew Valley
Euro Truck Simulator 2
LEGO Star Wars The Complete Sage
Legend of Heroes: Trails in the Sky SC
TLDR
Recommend me games I can play with one eye, low intensity and large text.
