Humble Originals are usually provided as DRM free within the bundles. Only if they make it to Steam as well, Steam keys are provided.
Regarding removed games: many removed games are still available by key selling websites and trading. There are several spots with information about removed games here on SG, but in Steam communities and on various websites as well. If you need information for a certain removed game, just specify it.
