I didn't get to play it myself yet, as it's a little bit expensive to me. But I know someone that did, and they cried playing it. Very emotional narrative game, quite different from Stray (since everything cat-centered is compared to Stray now).
Also, I really hope you get Smushi Come Home one day! (on your wishlist) I got it recently, it's really fun and cute, I enjoyed my time with it!!
Recommendations to play from your library:
Loddlenaut - Very cute, the cleaning is satisfying (didn't expect to enjoy it), the music is very nice, and the loddles are very cute!
Sheepy: A Short Adventure - Quite short, so give it a go! Please, play this with headphones. The music is all about the bass lines. Also, pixel art!
Death Stranding: I saw you only played it for 20 minutes... :') Did your PC not like it, or did you not like it? It has a very slow start, for a couple hours, and will feel quite boring (although you'll already see how gorgeous the landscape is)... I promise, try to play a bit more, and you'll start to enjoy it! And if you really don't, then that's fine too, lol. Slight spoiler that might motivate you to try again: If it's the walking all the time part that you don't like... You'll get to use a bike eventually, after maybe a bit less than a dozen hours if you don't spend all your time on secondary stuff (side missions and Photo Mode) like I do. And then, even trucks! And so much more! The lore is also quite interesting, and the music is nice, too.
I'd go for Mafia DE or A Plague Tale: Innocence (currently playing it, absolutely loving it and would really like a DRM-free copy), or even Remnant 2 if you feel like it! :o

This was super fun!! Basically you and your duo are a secret agent and "the guy in the chair"... You have several missions, and need to work together to solve puzzles and complete your objectives. Dredge is a really good game to play, people say it's a must-play top 10 indie game OAT but I beg to differ. It's really good though!
Atmospheric boat action mixed with "RE4 stash"-type inventory management with a smidge of Lovecraftian horror, fun gameplay loop, lovely art direction and character designs as well as rewarding progression and a great story. Some say a tad predictable but I did not catch on!
Bonus recs:
I see you own Return of the Obra Dinn but haven't played it yet! Tsk tsk... A real shame, it's a must play, my favorite game of all time! Beautiful dithering pixel artstyle, long and grueling puzzle game with interesting and engaging gameplay, superb sound design (& OST) and it fits the boxes for most of the other criteria as well!
The Walking Dead is the last recommendation I'll give and is the most mainstream one. I see you own that one as well. It's a good story for the first 2 seasons I think. Telltale style "your actions have consequences" type of storytelling. Engaging, heart wrenching and at times very funny writing. Definitely high up on my list!
I'll go for En Garde! and maybe for Remnant 2 :D

Oops, must've misread... I did also notice that you said "1 recommendation" but I love yapping my ass off about games I like and getting other people to experience them for themselves so the more the merrier in my opinion :p
To your inquiry, I'm not a very "niche" gamer LOL but I might have something for you from a publishing studio I really like:
THRESHOLD would've fit but it has some horror elements from what I could gather. Atmospheric story game with "choices matter", very grim looking but beautiful dithering artstyle. Releases in less than 2 weeks.
Mouthwashing is a newly released game. Again, beautifully written and executed short story about 3 hours, though you can replay it for probably 2 more times without getting bored which is what I'm planning to do. It's quite a ride. Though, it does have strong horror elements, about 2 jumpscares total and has a some pixel gore and weird unsettling visuals in some alot*... of the story sequences. overall not what you asked for but I heavily recommend it
The best fitting recommendation of theirs I can give you is Arctic Eggs which I have (sadly) yet to get myself. Physics based cooking, story rich, atmospheric, exploration, and a beautiful low-res-ish pixel artstyle.
They also made published Buckshot Roulette which got really popular when it came out. Also worth getting :)

I'll also repeat myself and ask that you give Mouthwashing a try also if you're feeling a bit more brave. The trailer doesn't do it justice, it's much more psych horror than horror horror. It's one of the best games I've played recently. Short and bitter(sweet? The story goes bitter in a good way and at the end I felt bittersweet because I really enjoyed the ride).

Tales of Spire: This is a must play game, if you are enchanted by Hobbit Shire from LOTR 1st movie, thats was my start of most heavenly, cozy and relaxing imagination for me, so TY, I wonder why havent I found it.
Wheel World: Again very hearty rec! what a game, cozy and driving, a must for me, there arent much games like this in this category!
Tinkerlands: Rimworld, Terraria are longest pixel and replayable games and I love anything thats quality in this category, so your rec is a gem

It's not out yet, I'm waiting for it for a long time now. Played the demo at some Nextfest, and it was one of the best, most atmospheric, and more than anything ADULT point n click adventure game I have ever ome across. Can't praise it enough.
