I have a general idea so far:

Mass Effect
(No dlc needed)

Mass Effect 2
(Lair of the Shadow Broker, Arrival)

Mass Effect 3
(From Ashes, Extended Cut, Leviathan)

Is that about right?

Update: Added From Ashes, thanks everyone for the suggestions! Looks like I have the major ones covered

I've played all 3 already and love the franchise, I was just going to buy the DLC and re-play it through to get more of the experience, its not worth it?

I'd recommend getting From Ashes for ME3. It may look like it only adds a squadmate, but it'll provide you a LOT of backstory you would otherwise miss out on.

Edit: If you're playing on a PC, I think Bring Down the Sky for ME1 is free. It's not really important and it doesn't really add much to the story, but hey, free is free.

From Ashes is essential too. It's a travesty it's a DLC.

Your list has the essentials, but consider adding some more:
ME2:
Overlord has no impact on the main plot, but it's a nice story and there are a few good visuals in there.
I liked Kasumi's Stolen Memory, and Kasumi herself is a fun squadmate. But it's a short loyalty mission, like the one for Zaeed. IIRC Zaeed was a free download if you have acces to Cerberus Network, right?
ME3:
From Ashes adds another squadmate, and that character is quite, let's say, intriguing. Though it could have been better.

Maybe grab Kasumi-Stolen memory for ME2 and Omega for ME3?

ME1 DLCs have no impact for the future, so ... yeah

LotSB really is a must
Arrival - not sure about that one, it's pretty linear, searching YouTube should be sufficient instead of buying this one

Ex.Cut - free = must have
From Ashes - highly recommended
(I haven't played any other story DLCs of ME3 that weren't free with the Cerberus Network pass)

I read that Leviathan answers a bunch of questions after the Extended Cut

Yeah, I'm planning to pick it up again from a save before the finale once all the DLCs are out.

ME1 DLC Bring Down The Sky does have a minor impact (excuse the pun) but it's also free.

The only thing about your choice i can say, is that ME 1 + 2 seems about right, haven't played 3 yet. But Lair of the Shadow Broker is storywise definetely a must, imho

If you're going to play ME Trilogy in one go, you really should consider not playing ending of ME3. It doesn't care about your actions through whole series (ok, fine, it cares who you'd banged in ME3) and doesn't care to show you what your actions actually did.

IF ME4 would happen right after ME3, then it would be fine. But right now, it's pile of crap that was covered with some fan-made perfumes called "Indoctrination Theory" so it won't stink - but that doesn't really work when perfume is made from same shit...
