Anyway Italy here. Off the top of my head, I am thinking:
Tomb Raider II and Chronicles (some levels set in present-time Rome and Venice)
Some point-and-click games (Broken Sword IV, Shadows on the Vatican series... there's bound to be more)
...but if you set aside the "country" concept and go back in time, then you'd have the Total War games (ancient Rome), Assassin's Creed (Renaissance Florence), and many more I'm sure.

Don't know about general music, is it something like EDM? Sweden always had great pop-music producers, and to black and neofolk I'd add many great avant-garde jazz musicians, but I can't call it cultural influence, nobody listens to avant-garde jazz. ) The reason why musicians like Mats Gustafsson exist is still money - Sweden has a program of artists support that works basically like USSR "house of culture" program, but more effective and more funded.

Serbia here. Usually as bad guys, with what little attention we get anyway. Same with movies. Also, the Serbian language spoken by chracters in both movies and games is more often than not gibberish or it contains broken grammar and such.

Recently found out that Estonia's got a map in Squad.
Though before that we've kinda popped up here and there. Whether the first ship from Call of Duty MW1 being Estonian, a map from Counter-Strike CZ Deleted Scenes being from a local city or some minor co-op map in Splinter Cell Blacklist being some small settlement here.
Of course, Euro Truck Sim's got us too. Basically we're side attractions at most and minor flavorings at worst. Eh, it's fine imo. That's what you should expect with any minor country.

Latvia - Metro 2033 comes to mind. Theres not really a setting in Latvia per say, but there is one station in Riga which is capital of Latvia. So not really set in country, but it does have hypothetical metro station which is located in Riga, Latvia.
Aside from that I can only mention racing games that include Bikernieku track (http://www.bksb.lv) in itself as we hosted World Rallycross Championship. So now the track is in Dirt Rally 2.0, Assetto Corsa, Gravel
Those are only ones I can recall. Maybe someone else can add more examples.

Its not located in latvia or riga, it is simply NAMED Riga, youre crazy if you think before that station youre in russia, in riga station youre in riga, and in the 3rd station youre back in russia, youre mental. Its just a name, not the actual location, use your head, look at the metro map during loading screens.Those are the only ones you recall? Then read my comment to see what i know of.

Never read the books and played the game maybe for half an hour only, so I didnt really pay much attention to that. Just noticed its called Riga and from diologue it kind of sounded they are going through to europe. So I just kind of pieced these things together and there I am thinking its in Latvia. (Even if theres almost no logic behind that)

I can count on fingers as to how many time i have seen India in video games.
I first saw Dhalsim as any Indian in video game in some old street fighter. He seemed pretty overpowered.
There was a mission from COD MW3 in india, i suppose the country was better represented than Russia from MW2.
Then FarCry 4 even though it takes place in a totally different country.
Then there is AC Chronicles India.
There is a full location in Hitman 2 from India. I should play it someday
Indian mythology is there in a few games but hopefully in future Kratos will turn his head this way.
And of course there is Gandhi from civilizations with his trigger happy finger.

Let me start off by saying that I'm from Sweden. If any of you have ever wondered, the "pannkaka" in my name comes from the Swedish word for "pancake", because that's my favorite food. Actually, I prefer to call myself "spökpannkaka" (ghost pancake), but since most websites don't recognize ö as a letter, I usually become spookypannkaka instead. (And I won't call myself spokpannkaka, because that's nonsense)
But that wasn't what this post is about. Recently I've been thinking a lot that damn, why do so many games place Sweden in a post-apocalyptic setting?
We have Mutant Year Zero: Road to Eden, which is based on the Swedish role playing game with the same name, and developed by a Swedish studio. I haven't played it but I'm assuming that's where the game is supposed to take place based on that and some funny references.
We also have Generation Zero, which is set in 80's Sweden in, that's right, a post-apocalyptic setting.
Recently I played Whispers of a Machine, which I guess isn't directly said to be in Sweden but it features typically Swedish names (with butchered pronunciation of course) and the town has signs that are in Swedish (skola and matsal for example). Aaaand it is in a post-apocalyptic setting!
Bonus: This is not a game, but Simon Stålenhag does some amazing post-apocalyptic Sweden art, and you should definitely check him out.
