You actually can fold the paper more than 7 times. Just that the paper needs to be extremely huge. It was proved on the show called MythBusters on Discovery.

Additionally, if you take a normal piece of paper and try to fold it more than 7 times with an hydraulic press, it will explode and turn into some sort of plastic :)
