You won't have to. The Steam version launches a week after the Epic Game Store version. Steam version won't be free however.
In regards to the new Samurai Shodown, however, they haven't said if/when there will be a Steam version so I'm going to assume that'll be a year long wait.

Twitch Prime members can claim these games right now:
Art of Fighting 2
Blazing Star
Fatal Fury Special
Pulstar (1995)
Samauri Shodown II
The King of Fighters 2000
The King of Fighters 2002
SNK is giving away many of their games on multiple platforms right now apparently. I'm looking forward to the Epic release.

apparently you do need to install it/launch(?) at least once during the free trial to actually keep it

According to this article, Samurai Shodown NEOGEO Collection will be free at launch on June 11 at Epic Games Store !
SNK has just announced the Samurai Shodown NEOGEO Collection, and as the name implies, it collects six games in the fighter series, as well as a mysterious seventh. Best of all, we don't have long to wait: it releases June 11. Even better, you won't have to pay for it, because it'll be free-to-keep on the Epic Games Store from June 11 to 18.
The pack includes Samurai Shodown I, II, III, IV Amakusa's Revenge, V and V Special, which takes in all the series' games between 1993 and 2004. As a very curious bonus, a previously unreleased version of Samurai Shodown V will also be bundled in under the name Samurai Shodown V Perfect. According to the announcement it's "the stuff of legends to SNK fans."
