If you don't want GTA/Saints Row/Just Cause, you're kind of out of options, really.

How about a flight sim game?

Maybe something from Bethesda (Elder Scrolls/Fallout), the Witcher 3, Sleeping Dogs, Watch_Dogs, Assassin's Creed, the new Mirrors Edge game or some of the new LEGO games?

Some awesome games without planes: Bully: Scholarship Edition, Valiant Hearts: The Great War, the Deponia series, Anna's Quest, the Trine series, the Hotline Miami series, Dying Light, a Sherlock Holmes game, The Witcher 3: Wild Hunt, Fran Bow, Mad Max, Dead in Bermuda, Ducktales Remastered. Also, check Daedalic Entertainment games (I already mentioned 2 of them) and Telltale games.
