Sidenote: this is also good reminder that you should never spend money on a game you are not ready to see go forever offline and purchases gone. But again, at least this one will get offline mode..

Industry practices are definitely a rant-worthy topic to begin with (within the current topic, especially for games that could be made offline compatible with ease)- but, even with all that in mind, it definitely feels like publishers are pushing more and more for quick shutdowns for online-focused instanced games in recent years, all while keeping up that trend of not putting in the small amount of effort needed to keep the game playable after. :/ (And let's not even get into the ridiculousness of things like how Overwatch was handled, huh?)

Game was great in beta, then for some reason they shut down the servers for a year, and remade the game making it slower and boring. I really tried to enjoy it but it's awful. If you want a good plat fighter, just go play Smash or Rivals of Aether.

You won't be able to play the game after May 30th if you haven't logged in at least once prior to then, during this period. (The various announcements/pages even explicitly mention this fact, many times, in many ways, so it's definitely a sure thing barring some major misinformation from the publisher.) The game is designed around an account creation system, and this period allows you to get an account made, and then get that account data downloaded locally.
It's entirely possible to get offline play working through a local account creation system or by stripping account usage out entirely, but they've not mentioned any plans of doing such (and, given a choice between implementing one of those or the current system, their choice to do the latter makes sense, as it's not only typically simpler to implement but is the only option that allows for retention of current account data- and as you know, publishers are very much prone to a "good enough" approach, so to their minds this is probably wrapped up well enough).
As such, you should assume that the game'll become permanently unplayable if you end up not logging into it during this period (even if only going with that assumption just for the sake of being safe).

I'm in no way a fan of delisting and this is no exception, but credit where credit is due, at least they make the game available to play offline
I think the aftermath of The Crew is beginning to change things with or without legislation.
Not enough without legislation obviously, but having the industry spearhead some ideas will reward those who pick up the change of consumer interest and also extend what will be thinkable and demandable.

The account creation system's going down after this season ends, which means if you don't have an account made (with it automatically downloading relevant offline data to your PC or console during this period) then you won't be able to access the game after this period.
In other words, logging in during this period shouildn't be related to unlocks (in fact, they specifically mention that all characters will be automatically unlocked once the game goes offline, so I'm not sure there'd be anything you could retain from current or past play, beyond play data and possibly cosmetic unlocks), but a way of creating a sort of virtual server for offline play.
Basically, the game is built around having an account for play, and rather than take the time to strip that stuff out or add an offline account creation system, the publisher seems to have gone with taking online account data and backing it up offline, while adding an online bypass function to enable offline play.

But in the last quote you posted it says:

That makes it sound that even if you don't create the offline save, that is created during the season 5 period you can still play the game, you would just be missing the unlocks and purchased content.

I suppose it's ambigious. It's definitely phrased like you need to log in during the period to get the account made at all, but there's definitely room for interpreting it as only referring to saving existing account data. (Less debatable, it's fairly clear you'll no longer be able to add the game to library after the date.)
I'd checked with reddit and tons of different articles beforehand, and they all interpreted it as "you have to log in, period", which is also how I interpreted it. (Specifically, I'm interpreting the references to existing account data to be intended as being reassurance, rather than as logical points of seperation. For example, I'm interpreting "to enjoy the game offline with all earned and purchased content moving forward." as "to enjoy the game offline, and you will also retain all existing data" rather than as "to keep all existing data when playing in the new offline-only state").
Double-checking now, I've found plenty of other discussions all agreeing to that interpretation, and none disagreeing- but I've also not found any official statements on the matter. So, really, it's ultimately a question of if you want to play it safe or not.

To me, it goes like this: "if you've played this game before, log in to the game before May 30. If you've never touched this game but kinda want to play it one day, just add it to your library before it's gone".

In short, it seems as if the game won't need to be kept installed after you download it and log into it; Rather, it's just important to do the download/login within this time period so that the correct authorization/configuration file can be downloaded to set up offline account access.
As a final consideration, existing players should note that premium currencies (gleamium, character tickets) will be removed on May 30th and should be used prior to then.
Multiversus can also be similarly setup during this period on Playstation, Xbox/Microsoft Store, and/or Epic.
