I don't really know a lot of animes, just very well known ones (like Death Note or Elfen Lied) but I have to say that I really enjoyed RWBY.
Well, if you can call it an anime, that is. :)

"Fullmetal Alchemist: Brotherhood" is exceptional. I also enjoyed "Death Note," and what I've seen of "Attack on Titan." Would tentatively recommend the first couple of arcs of "Bleach," too, before it went off the rails.

Serial Experiments Lain is on my to-watch list.
I need to see it after I watch Higurashi no Naku Koro ni Kai (sadly havent watched it yet, for some reason I felt that I needed to watch this in the Summer of this year(watched the prequel last year during summer as well) in one sitting :) ).

Too many anime... too hard choice.
Maybe - Mononoke Hime.
Also FMA Brotherhood, FLCL, When they cry , Slayers 2nd season, about all Miadzaki films, GTO (I'm teacher too), Natsume book of friends, Nodame Cantabile, One Piece of course, Umatawarerumoro (or some about it), Candy Candy, Maya the bee, Ann of Green Mesonines, an of course of course - Flying Ghost Ship

I'm not really sure there is such thing as the best anime. All good animes have something that really makes them special in their own way and it's pretty much impossible to chose one to be "the best".
I've watched so many really great animes that I couldn't even decide on top 10 list, because too many deserve the spot in there.

TL;DR
Don't care. Don't be a lazy butt and read it anyway.
Higurashiiiiiiiii! Finally another fan :P
I didn't care much for Umineko No Nako Koro Ni though, least not the anime. I have 'read' through the entire visual novel series (for Higurashi too) of it though and really did enjoy it. First part is hilarious with the whole "I'm gonna fallllllllllllllll!!!!!!!!!!" thing. I know she's only a kid and all - not even like Rika who was technically a couple hundred, but I did reallllllllllllly start to hate Maria though, that whole cackle laughter... It was kinda explained - ish - later on, but meh.
Rika makes "multiple" appearances in Umineko too; Hanyuu would make more sense Auau hauu hauu auau auu-wa hauuau!
Ahem. Anyway, yeah, won't spoil it beyond that, much, but she really is an evil twisted little... in Umi.
Well, Hanyuu would probably get "taken home" again if she showed up in Umineko.

Anywayyyyyy! Before I actually decide to go watch Umineko since actually remembering it again...
I really couldn't pick out a favourite ~.^
favourites from each genre, maybe.
Many of them need extra seconds >.> The manga for Kyōkaisen-jō no Horaizon has enough to manage at least two more seasons, I want to see Nate's mother!
Not to mention "Spice and Wolf", "Rosario + Vampire" and "Sekirei".
In some respects, Sora no Otoshimono has been finished via films rather than anime, but anime would have been cuter.
Some animes though just go on WAY too long for their own good, including one in-particular which I won't mention here because it is finally ending soon anyway. No doubt all the fan-boys would jump on it. Maybe soon Shueisha will finally go back to Rosario + Vampire and a couple of their other classics; even if they are also responsible for a couple of other "ridiculously long and repetitive" animes with little to no plot development.

+1 for Kara no Kyoukai, but my absolute favorite is Hotaru no Haka.

I guess you know it's more filled than real story.

Everyone says "Another" is very psychological... horror wise. Least most that I've spoken too. Probably never seen Higurashi though, or the Corpse Party anime... Heheheheh... One guy who watched that ended up with insomnia for 3 days... and he was one of these who claimed Another was scary.

Just watched Another about two weeks ago, didn't really enjoy it. I found the plot shallow and predictable while the characters were all rather dull.

Bleach would probably be my favourite. But I have a lot that I would like to watch so we will see if that will change.

What is the best anime you have ever seen?
My favourite anime is Higurashi no Naku Koro ni, I watched it about a year ago in one sitting.
Can't really say much about it, it just has everything I love in an anime executed in a peculiar way that I enjoy :)
