Anyone knows what the minimum amount of Loot Coins will be that you can get from the Loot Coin Card from the Assassin's Creed Loot Pack?
Maximum is 2000, but minimum would need to be 1000 to at least make up for the initial price if you shred all the cards.

It's correct that Steam Gift Cards should auto-convert to your account's set currency upon gift card activation.
In this case, the straightforward assumption would be that Sergieku both received a 50E card, and has Euros as their default currency. As such, there's shouldn't be any issues on Steam's end, it's just that Lootboy presumably gave a euro code rather than a dollar one.

Actually, back when I first started using the site, all codes were in € [at least, as stated by pack description]. Which isn't surprising, given that it's a German site that was first strongly directed only towards Europeans. Since it does seem that the pack description has changed since then, perhaps they lucked out and got a hold of an older code that was left over? Assuming my recollections are correct, anyway, it'd make for a reasonable explanation.
Leftover Euro codes would also explain previous comments in the thread, which seemed to have both Euro users receiving USD, and USD users receiving Euros. That or they've been a bit random from the start? In any case, it's still the likliest explanation that, under whatever premise, this particular instance was caused by Lootboy giving a Euro card rather than a USD one (versus there having been any faulty conversion).
Unless you're saying it at first said $/€ within Steam client and then converted, in which case.. yeah, that'd be unexpected.

I only ever saw them with $ on it, if they were € before which indeed doesn't sound weird because why would a German company give $ and not € in the first place? This person won a 50 one which aren't won often so maybe he indeed still got an old code but they changed the cards all to $ already before running out of the € cards, that would indeed make the most sense in this.

Each pack has their own set of exclusives. We can't tell what the underlying probabilities are, so it's impossible to determine what packs are better than others. However, the FSA (or any console pack) guarantees that if you get an exclusive, it'll be a good one. For all the other packs, you've got a shot at getting a top-value [eg, $80+, brand new release] game, but also of getting low value bundle fare. In short, the other packs are far more gambling-oriented.

I spent 20000 coins trying to see what the chance is to get some diamonds and I got absolutely none with the purchase of 10 loot packs.
I guess I won't bother further trying to get diamonds with those.

First off, you didn't really spend 20k coins for 10 loot packs, because there's always some coins (at least 500? or was it 250?) in those packs and you can shred the cards you get for some coins as well. So, if you effectively spent 20,000 coins, you probably bought more than just 10 packs. That being said I also bought some packs right now, because I was missing only one diamond for FSA, I spent about 9k coins for like a dozen packs, no luck. Yup, either we're extremely unlucky, or they reduced the chances.

Yeah, probably I bought more packs, I simply saw how many goins I had and I stopped when I had 20k less. You get some coins back, yeah, but what I got in those packs was absolute trash so...not worth it.

I did get diamonds from those packs in the past, like 3-5 in every 10th pack or so. Maybe they did decrease the chances, maybe chances are better with Safari Venture, who knows. However, Safari Venture also costs 5 times as many coins and I'm not interested in the game, because it doesn't have trading cards - which (apart from that small chance on a Steam wallet code) is the only reason I bother with lootboy at all. I guess I'll just wait until the exploration quests reset tonight and have that 1 diamond as well.

The old range was, as I recall, 2 cards at [350, 500, 750) each, with one of 1000 or 1250 being your most likely total refund amount.
Now it's a straight range of 500-2000, with 500 being the most common drop by far; As such, the max range has increased, but your overall average should be much lower than before they switched to a single coin card.

Well, you do, though. The top return went from 1500 to 2000. Hence, more. They just phrased it really misleadingly, with the implication that the average would be going up, rather than the maximum- which, after opening hundreds of packs pre-change and 50 post-change, definitely doesn't seem to be the case (I was getting nearly twice the average coin return pre-change).
That said, I'm not sure why you're bringing up FSA packs; I, and I believe the others in this nesting, are actually exclusively making reference to the standard coin packs.

The odds from my own tests across 100 packs suggest the odds are something like 1 in 50 [as I only got diamonds twice from the packs, and even then, I think only to a total of 3 or 4 diamonds], so you'd be spending 100K coins for a reasonable shot at diamonds. Rare and low-value as they are, it's likely still better to just hold on to coins for the non-standard coin packs.

They don't seem to have any real restrictions as far as platforms or price, so you can theoretically get pretty much anything from the general pool [as they don't give any sort of complete list for possible drops], though they seem to restrict the highest value items to pack exclusives. Of course, the fact that they seem to heavily saturate the pool with games of low vaue means you're not especially likely to come across something of any sort of value, such as Minecraft. :P
Even more interesting is that you can open a console pack and get a PC game, given that it's entirely possible for someone to use the site just through mobile app without owning any sort of PC.

I know I've seen some people getting GOG games, but are you saying that I could get as an exemple get a Xbox game in a FSA ? That would be bad, I don't even own one...

Each pack only has a limited number (say, 3 to 8 or so) of exclusive drops, listed at the top of the pack description, of which you've a small chance of getting a pull from. Usually, you'll instead get something from the general loot pool that all packs have access to, which can give you a game for any PC platform.
I don't believe they have any console games available anywhere on the site, as the console packs actually have store credit codes as their exclusives, same as the FSA does for Steam. Any premium pack can, however, theoretically drop a Win Store, UPlay, GOG, Origin, or Steam key. [Perhaps even BNet, Twitch, etc; Lootboy doesn't seem to make any distinctions on PC platforms at all, so drops should be limited simply to what Lootboy can get a hold of, rather than to any sort of preference on their part.]
In other words, as a PC-owner, you shouldn't ever be in a position where you get something you can't use (though whether you want to use that platform or game is another matter). Hence my pointing out that such a dynamic wasn't true for those aiming for console packs, as they still pull from the general PC-oriented loot table, rather than having their own console-based one [though in fairness, it's not like consoles have all that many low-value games to bulk up packs with, like PC does; As such it's not feasible for Lootboy to switch to such a dynamic without also making console packs a fair bit more expensive].
Who does own one (and also uses this site)? Most people I know favor Nintendo for consoles, followed by Sony, and skip XBox in favor of PC, where possible. Xbox is generally just considered an alternative to PC gaming, at least within my circles.
