If I recall correctly, you can pause the sub for the next month by going to the settings. However, this can only be done before the last Friday of the month. You also must not choose to receive the next month's unlock earlier already.

Yeah, you will just extend your subscription time with +12 months. When you go to Settings you see there what plan of subscription is currently active and when will it end. New one-time payment will just increase that amount by the specific months. And cancelling will just cancel the billing which also reads in there. You will still receive all the games for the bought months even if cancelled.

So I was wondering, say I have an active 3 month subscription of Humble Monthly. I'm currently in the 2nd month of the subscription. If I cancel my sub on the 2nd month and change my plan into a yearly subscription, will I still get the third month's content as part of my previous subscription or will it be voided?

EDIT: Support has replied, it's true that they'll just add up all the remaining months into your current subscription.
