It'd be really nice if it was possible to filter giveaways by games that have VR. I'm thinking it'd be best to do the same method that's used for indexing game prices but use a separated database that collates with the main db -- and would not need to update nearly as often; once a day or once a week would be fine I think.

Tag filters will come to the site one day. I can't give you an exact date of when that'll happen though.

Once this happens I can easily hide "Match 3", RPGMaker, Hidden Object, Casual, VR, etc.

So, would you need someone to do it manually or is that reported by the API?
If the first one, I'd say no, there's enough lists that have to be maintained by hand. If it can be done automatically, sure.

If not there are ways to scrape and parse their listings that wouldn't be "manual" as you're thinking. There are several methods to go about this and I'm sure there are some XML readouts for some of these.

Right now there are no tags filters, but that would probably be the way to handle it.

I like that idea, if what you're suggesting is perhaps the overlying way to handle it would be to implement a tag filter that utilizes Steam's tags and also can display tags on the site if the user wished.
