Can we keep a pre order copy (as gift) of one game as much time as we want? and get the bonuses for example 1year after the game release?

Yes, you can keep preorders in inventory and get bonuses after release.

But don't know about "as much time" part - it should be preordered gift forever, but I won't say that is 100% accurate.
